Fall into Cooking Featured Recipe: Braised White Beans from Gluten-Free Girl and the Chef by Shauna James Ahern and Daniel Ahern Autumn brings relief. Sure, we miss those dog days of summer—the sprinklers, the popsicles, and the ribs on the grill. But when the heat recedes, we can finally do something that gives us great joy: turn on the stove. In our house, the fall means braising. Usually braising—a long slow simmer on the stove or the oven—means meat dishes. In this case, we take the rind of a good Parmesan cheese, white beans, and quality olive oil, then let them braise overnight on low heat. That slow simmer yields beans with a meaty, creamy tenderness and a little crunch on top. One bite of these and you’ll be happy it’s autumn again. --Shauna James Ahern and Daniel Ahern Serves 6 Ingredients 1 cup dried cannellini beans, soaked overnight in cold water 1 small nub Parmesan cheese rind (about the size of half a thumb) 3 cups olive oil (you want a mild to peppery oil, not fruity) 3 cloves garlic, peeled 2 spri...

Over the last decade, a vegan diet has become a more mainstream choice; food allergies have been increasing at alarming rates; and celiac disease is on everyone's radar. When owner Jennifer Katzinger opened The Flying Apron Bakery in 2002, she wanted to accommodate more people, as well as use healthier ingredients so she eliminated gluten, dairy, egg, soy, and wheat. The mouthwatering result? Cakes and muffins with a tender crumb, cookies with a chewy bite, frosting that's light yet satisfyingly sweet, and pastry that flakes at the touch of a fork. In Flying Apron's Gluten-Free and Vegan Baking Book, Katzinger shares the delicious secrets of her sweet and savory recipes. Bake yummy pastries like Blueberry Cinnamon Scones and Lemon Poppy Seed muffins, or whip up a batch of Chocolate Chip Cookies, or Cardamom Spice Cupcakes. In more than 80 recipes, Katzinger offers satisfying treats, whether you're transitioning to a vegan or gluten-free diet, or simply wanting to indulge a sweet tooth using healthier ingredients.

Living Gluten-Free For Dummies, like all For Dummies books, is divided up so you don't have to read it all at once, or even front to back, if you don't want to. You can skip from B to R to A and even reread B if you want to. You can read it sideways and standing on your head if you'd like; all you have to do is find a section you're interested in and dig in (how's that for liberating?). I suggest you peruse the Table of Contents and see whether any particular chapter or subject really floats your boat, and start there. Or you can flip through the book and see whether any of the headings catch your interest. If you're new to the gluten-free lifestyle and have tons of questions, you're probably best off starting at Chapter 1 and working your way through most of the book in order. If you've been gluten-free for years, do yourself a favor and take a look at Chapter 4. You may be surprised at some of the foods that are allowed on the gluten-free diet that used to be considered no-nos. You may find this chapter opens a lot of cupboard doors that you once thought were closed!
